I Carry Your Heart With Me

It's Friday.  Memorial Day weekend Friday!  WAHOO!
Hope y'all have a wonderful holiday weekend and take some time to remember those who are no longer with us (and those who still are).

Today I am going to share with you one of my most favorite poems, I Carry Your Heart With Me by E.E. Cummings.  I am also dedicating this poem to a very, extra special person in my life.  (You know who you are.)

I CARRY YOUR HEART WITH ME
by E.E. Cummings

i carry your heart with me(i carry it in
my heart)i am never without it(anywhere
i go you go, my dear; and whatever is done
by only me is your doing, my darling)
i fear
no fate(for you are my fate,my sweet)i want
no world(for beautiful you are my world, my true)
and it's you are whatever a moon has always meant
and whatever a sun will always sing is you

here is the deepest secret nobody knows
(here is the root of the root and the bud of the bud
and the sky of the sky of a tree called life; which grows
higher than the soul can hope or mind can hide)
and this is the wonder that's keeping the stars apart

i carry your heart (i carry it in my heart)

Longing For Pool Days

The pool FINALLY opens tomorrow!!!
How excited am I about this?  You.Have.No.Idea.

I pretty much yearn to be posted up by the ocean or the pool every day of my life, so I couldn't be more excited for tomorrow.  Sadly, I won't be able to hit up the pool until Saturday; but you can pretty much find me there every weekend from now until Labor Day (the dreaded closing of the pool).

I wish I looked as chic as Marilyn!
(& that tummy tucker bikini's were still popular! haha.)

I'm not quite sure why I love the beach, pool and swimming so much.  But I do.  Something about splashing around in the water, feeling the warm sun on my skin, listening to tunes, relaxing and reading a good book make me feel like I'm a child again.  I love summer weekends!!!  Thank goodness they are finally here.

Oh and an added bonus with Memorial Day weekend!  WHOOO!
Anyone else have plans to hit up the pool this weekend?

I love Red Velvet Cake & Anything Associated With Such Deliciousness!

They now make Red Velvet Cake Ice Cream.  I've been searching and searching, but my grocery never has either brand.  I've seen commercials for the Blue Bunny Red Velvet Cake Ice Cream, but I didn't know about Ben & Jerry's until I did a little research.
If this stuff is all over the Internet, why isn't it in my grocer's freezer?  Hmmmmm, Kroger?  Why can't you get it together?

Just when I thought my diet can't get any worse, they go and make an ice cream with chunks of my favorite cake in it.
Now.  On to the important topic.  Where can I find it?  Have you had either brand?  How was it?

The Crock Pot

We've been wanting a crock pot for quite some time and finally got one when my Mamaw hooked us up for my Birthday.  I'm completely jazzed about our new kitchen appliance and Mr. D is ever more excited because he's been begging for a crock pot for months.

The problem?  I only have one crock pot recipe.  That's right.  One.  While it's a great, easy and delish recipe, we certainly can't eat it every night.  This is where y'all come in.  Anyone have any great crock pot recipes they would be willing to share?  Preferably healthy, low-cal/fat/carb recipes; but I won't be choosy.  Any recipes would be wonderful.  (And no, I don't want to just go buy a Crock pot Cookbook.  I want real recipes y'all love and make all the time.  Yes, I'm being demanding, but I'll share my one crock pot recipe with you in return.)

Shredded Beef Sandwiches
1 medium sized Chuck Roast (Poor Man’s Roast)
1 packet of Lipton Onion Soup
1 cup of water
1 12 pack of Hawaiian rolls

Mix packet of Lipton Onion Soup with 1 cup of water. Rinse roast with cold water and add to crock pot with water and Lipton Onion Soup packet. Cover. Cook roast on low/medium temperature for 8 to 10 hrs. Remove roast and shred with two forks. Add shredded beef to your Hawaiian roll and there you have it!  Perfect for potlucks, tailgates during football season, or a busy evening when you're not going to have time to cook dinner.

Now, if you could just email me or post your favorite crock pot recipe in the comments, that would be splendid!  :)

Birthday Cookout & Cuppy Cakes!

This weekend we did a little Birthday Cookout with some of our friends.  It was so nice to be out on the patio, enjoying the weather, relaxing...until it started raining.  (Seriously, this weather is about to make me go crazy.)

My favorite way to eat cupcakes is probably cupcakes in an ice cream cone.  My Mom used to make them for me (I always requested to take them to school on my Birthday) and I would be lying to you if I said I had outgrown the tradition.  This year we had funfetti cupcakes in an ice cream cone (but any kind of cake will work) and they were so so so good!  Too good actually, because I ate waaaay too many.

A BIG thanks to all my friends and family for making my Birthday and week so special.  Y'all are the best!
Hope your weekend was as delightful as mine was.
